Locking down Windows 2003 Documents and Settings Folder

Hi.

For security reasons, we need to lock down our terminal servers in order that users can't see who else has logged onto the Terminal Server. The only outstanding area of concern is the Documents and Settings sub-folders which obviously lists the names of all the users who have had a profile on the server. Can you recommend a way of locking down the Documents and Settings root folder so people cannot see the profile-generate folders below, or a piece of software that can do this. We can lockdown the Documents and Settings folder manually with traverse only rights but then products such as Acrobat Standard and Microsoft  Picture Manager don't work correctly as they require the user to have full rights to see Documents and Settings sub-folders.
