Microsoft is very coy in their requirement documents as to processor types. I've looked through several of their documents and have yet to find an unambiguous answer.
The genesis of my question is that I seem to recall (correctly?) that Exchange 2003 can only run on 32-bit architecture. Thus I'm looking for a direct yes/no as to whether I can install and successfully run everything in SBS 2003 on a CPU which is 64-bit. And it doesn't help that AMD bills their cihpset as "being able to run both 64- and 32-bit apps." If my premise about Exchange 2003 is correct, then in the former instance (pure 64-bit), it would seem no. In the latter (AMD's claim that the Athlon 64 handles both), I have no idea.

There's no problem at all running SBS2003 on a 64-bit machine (although it must run in 32-bit mode). Whever you've heard about Exchange not running on 64-bit isn't true, it was due to some poorly written Microsoft documents (see: http://msexchangeteam.com/ archive/20 05/11/18/4 14796.aspx )
If I were buying a new server today for SBS I'd only get 64bit since the next version of SBS will be out in less than 2 years and it will only be released in 64bit.
