I thought so, but Unbuntu (during the installation) never gave me the option to do so. It also acted like it could not find my harddrive. I figured that was just Unbuntu. Then I tried sticking a windows 2000 server disk into it and going through the format process (just to get it formatted) then stick the Unbuntu disk back in, but the Windows 2000 Server disk didn't recognize the hard disk either. Weird thing is, I can boot the machine up fine. Any ideas?

This can be accomplished by simply installing the OS you wish to install from CD, should format the drive during the installation. There could be issues with different types of hardware but for most common installations it will give you step by step instructions when formatting the drive etc.
