You have to look at why its stopping.  Most likely its a corrupt item in one of the fax folders.  But look at the fax log to find out for sure:

C:\Documents and Settings\All Users\Application Data\Microsoft\Windows NT\MSFax\ActivityLog

There is inboxLOG outboxLOG and scheme.ini cant see anything about an error or the service stopping in these.

In that same MSFax directory, are there any items in the Queue folder?  If so, delete them.  If there are any that cannot be deleted, you can download and use UnLocker to remove them:

A few in application saying failed to send but I guess thats the fax at the other end not picking up
