I have read a lot on this but am still unsure weather I should be doning this on my server or on 1and1's.

Hi,

The spf record create as text record in the DNS and it look like as follows.
"v=spf1 ip4:<Mail server IP> ip4:<mail serviceIP> mx a:<mx record name> mx:mail.domain.com include:<mail server full qulified name> ~all"
You can your self create spf record for your domain if you have all DNS details.
