you can absolutely set it up this way. the way you do it depends a bit on your DNS provider.
if it were me, i would set up a free DNS account at zoneedit.com.
log into your domain dashboard at the registrar and change the nameservers to zoneedit's.
then at zoneedit, you would point your www record to the web host, your mx, vpn, owa specific records to the dynamic dns location. that said, you probably only need 1 record which could be used for all three. just call it MAIL.domain.com or remote.domain.com or something like that. then get a cheap SSL certificate from GoDaddy or something.
zoneedit even has a utility which updates the dynamic dns address. i have used zoneedit for years and i like it because the DNS config is very straightforward. plus it's free.
HOWEVER, i JUST realized that SBS2008 has a BUILT IN dynamic DNS client. How cool!

You just use a dynamic DNS service. To use your own domain simply put remote.example.com as a CNAME to the dynamic DNS host. The users enter remote.example.com, but it actually resolves to host.dynamicdns.com.
