Restrict users to one machine

Hello everyone,
I have a Win 2003 server that I have to join to the domain. This server is controlled by a company off site. They are accessing the machine via checkpoint vpn. I need to only give them full access to that box, not the rest of the domain. I am not sure how to do this, I assume it is some OU with Group Policy.
