Best DNS setup between sites

Hi,

I have 1 W2K3 domain with 2 sites separated by a VPN link, 1 DC per site.

I'm replacing both DCs with new 2003 server R2 servers.

I inherited this network and as I'm now getting to upgrade the DC's I want to make sure everything is setup correctly.
I don't have a lot of experience managing DNS therefore would appreciate clarification on two points:

The existing DNS server contains records for old PC's/laptops which haven't been on the network for a long time.  I don't want the new DNS to do the same therefore is it possible to automatically remove old records and if so, how do I do this?

Should I zone transfer between both DC's across the WAN os that each has up-to-date records for all PC's?
