Need advice/recommendations on Network Upgrade

I have a Windows 2003 Network with 7 servers across 5 sites. In the main site, I have a Domain Controller running Server 2003 Enterprise and also Exchange 2003.

I have purchased a new server to replace this server and am seeking advice and/or recommendations as to wether I should upgrade the server to Windows Server 2008 and/or upgrade Exchange to 2007.

Will Server 2008 work in a mixed environment with all the other servers running 2003? What are the benefits or drawbacks of doing this?

Should I upgrade my Exchange from 2003 to 2007? What are the benefits or drawbacks of doing this?

Please do not copy and paste links to articles. I can find these on my own. I am looking for personal experiences that people have had and what they think I should do based on those experiences.
