OS Partition Size in Windows Server 2008?

I popped in the Server 2008 CD and I expected to be able to choose a partition size on my 750gb hard drive in which to install the OS.

But it doesn't appear to give me that option.  I only get the choice to install on one or the other of my two 750gb hard drives.

Am I doing something wrong?  Am I missing something?  Is it wrong of me to even WANT to install the OS on a smaller partition (as I'm used to doing with other versions of windows)?

If I want to use Hyper-V, is it BETTER for the OS partition to be as large as possible?

Any ideas on this?
