Partition sizes in Windows 2008

I am just about to buy a backup server (intel SSR212MC2 - 4GB RAM) with 12TB hard drive space. I am going to install Win2008:
- Is it worth installing 64bit Win2008? The server is just a backup server, it is only going to receive files from across the network .
- What are the largest partition sizes I can setup in Win2008? All 12TB are RAID 5.

OK thanks, so to conclude when I receive my 12 TB server there will already be a 50GB C: boot partitiion (win2008x64) is it OK\recommended (I do not fancy GPT because of what RockChalk said) to setup the remaining unpartitioned space as partitions D:\-H:\, 2TB each?
 
 
Yeah, I think that'll be better anyway as you can split things like SQL and Exchange databases.
