We are fresh out of ideas on how we can troubleshoot this, any general suggestions?

I would say, whenever there is a trappable error, you should have something in event log or a dump file. Whenever you just switch off the machine, a popup at the reboot will come up and reports an unexpected shutdown. Also other errors according to memory, processor or drive errors may produce any kind of message or event log, as W2008 recognizes, that there was a not regular shutdown before.
I would also say, especially if this is always at the same time, that is is a controlled shutdown for any reasons. You may find out (task sheduler), if there are any task which may be the reason.
Updates may restart the server if necessary and applied automatically. But this should be more sporadic.
What is about an USV? Some of them make a self test from time to time and if the batterie is at the end of life, it maybe that an USV initiates a controlled shutdown.

Does it reboot at the same time/day each week? Perhaps you have a script it set to run and reboot the computer. Hopefully the event viewer will have some information that may be helpful too.
Good luck.
