Since the files are on a NAS, I don't believe you will be able to copy the shares, you can only copy the folders. If the folders use NTFS permissions based on AD users, then you should be able to copy the permissions too. You can do this either by backing up using NTBACKUP, Backup Exec, or some other backup utility, and then restore to the 2008 server's drive.
Then you can recreate the shares.
I believe the only way you would be able to copy or migrate the shares would be if both the target and source drives were attached to the server, or the shares were on a different server in which case there are some procedures for copying shares from one server to another.

I use xcopy
