Now that I have done this, where is it? How do I configure it? Does it just work? How do i use it to send mail?

You want to send to external people or just within your organization?
If the latter you may need to set up reverse DNS on your server to avoid spam-blocking problems.
Just google 2008 configure SMTP, lots of articles for instance http://www.itsolutionskb.c
You will want to block incoming traffic if you are sending out and connected to the Net. Routing and Remote Access has a rudimentary packet filter that may do (or use Windows Firewall or whatever.)
Just make sure nobody extra is authorized. :) As far as spam filtering, try to make sure there is a reverse DNS record so that future problems don't crop up.
You can check to see if there is reverse DNS using NSLOOKUP, just type in the IP address (external) of the server and see if a name comes up. If not, your ISP can set it up for you.
