Server1 DC, GC, Windows 2008, FSMO Roles
Server2 Member Server Windows 2008
Server 3 DC Windows Server 2003
We have about 15 servers on Server2 all of them are shared but none are appearing in Directory?? I have double checked that List in Directory is ticked on all of them.

Try to restart print spooler service on print server, or reboot the server.

I've seen this issue before that printers are not registered in AD until restart.
Your domain setup is a little bit confusing. Why mixed OS of DCs and having newer OS as member server?
Having all DCs running the newer OS makes it possible to raise the functional level of AD to get newer features.

Also promote both DCs to become GC
