WINDOWS SERVER 2008 OR 2012
Hi, im a desktop support eng supporting 7 and 8. Looking to expand my skills doing Server, Exchange, Lync and Vmware. My question should i do Mcsa 2008 or 2012 and Exchange 2010 or 2013

It is always good to keep you up to date. So go for windows 2012 with 2013 exchange. However, 90% customer are on 2008, so you should know 2008 better than 2012. Max customer follow n-1 formula for software upgrade.
Agreed. However 2k8 exams have been revoked by now, can't take any.
Only 2k12 available, so no question about it. But as a good practice to be familiar with 2k8 and 2k8r2, watch out CBT Nuggets / Trainsignal videos.

Go for MCSA 2012, then MCSE Server Infrastructure.
Same for exchange. 2013.
About vmware, depends on what you want, but vcp550 exam for vsphere 5.5 datacenter virtualization is a good deal.
