windows 2000 server freezing

here's a funky one. There are 5 servers with windows 2000. 2 of them on a dmz and three on the private network. the 2 on the dmz are a web server and mail server and the ones on the private network are a sql server, active dir/dns and file server. oh yeah, they have a cross-over cable between the sql server and the web server (I'm trying to get them to not do this.) One day, the mail server on the dmz started acting really slow with processor at 100%. They attributed it to a microsoft kb. They uninstalled it and the proc went down. woohoo. however, they broke Norton in the process. It had a red circle with a line through it. A few days later, 3 of the other 4 servers, the one on the dmz and 2 of the ones on the private lan started to have the same problems. Norton up and died. Ahaa! Virus, you say. Well, this is when I was called in. I scanned the servers with clam. I booted to safe mode to try to uninstall some apps. Here is the list of things it can't do on 4 of the five servers...

can't unistall apps. typically get error 1077
can't change status of processes from auto to disabled. will freeze unless in safe mode.
opening IE takes for flipping ever. Once up it is very fast.
clients are experiencing timeouts accessing pop mail server.

Things to note.
routing service is not enabled on the two boxes with the cross-over cable. still don't like it. I did disable one and both of the network cards to see if that would help but no luck.
