IIS SMTP Email on Windows 2000

I am getting ID 4000 errors in the Event Log - Unable to bind to destination server in DNS when trying to send emails from ASP/.NET and VB applications (using CDONTS) in IIS 5.0 through the built in SMTP service.
We have three Windows 2000 Servers and one 2003 server all running IIS.  Each sends emails via the IIS SMTP service back to our office over night.  The three 2000 servers stopped working last night but the 2003 one worked Ok (and continues to be ok).  There is no DNS problem (nslookup on the Windows 2000 servers for the MX record of our office domain works fine) and I can telnet to the office SMTP server without any problem.
I have noticed that when I switched on logging for the SMTP service no log file is created.
I have installed all of the latest MS patches and Sps and have rebooted the server(s)
