You'd be better off recording your sounds to WAV files at whatever frequency and bitrate serves you best, then converting them to MP3 using one of the programs available for this purpose. This needs a lot of disk space, but because you're not having to do the MP3 compression in real time, you don't need to worry about how long it takes!
