What versions of Linux run well in Microsoft Virtual PC 2007 and/or Virtual Serer 2005?

Within MS Virtual PC 2007 (both x86 and x64), nearly every version of Linux that I attempt to run or install has problems running, crashes, will not allow mouse movement once installed.

What versions of Linux have you got to run on Virtual PC 2007, and were there any tweaks required?

For reference, I am running a Pentium D 2.66Ghz, 2GB RAM, dual boot. Windows 2008 x86 run MS VPC 2007, and Windows XP Pro x64 run the 64-bit MS Virtual PC 2007 x64.

I'm also not averse to running Virtual Server if that seems to work better.
