Even though you think vLite is complicated it's really not.
I agree with leew, vLite would be the way it go. It means you bypass ALOT of manual steps with command line parameters.
You can make vLite as complicated or as simple as you wish.
If you click on the integration tab, enable it, and insert the hotfixes and SP's available, then goto the ISO tab and you can choose direct burn (to burn directly to DVD) or write as an ISO you can burn later.
Trust me leew's recommendation is alot simplier than doing it manually or any other way I've found, and gives you alot more power over your installation if you do want to tweak it.
