What is the best way to move a user profile to an external location when re-installing an os?

This question is for windows 2000 but I would also like to know how to do this for Windows XP.  I THINK the way you do this for w2k is to go into ctrl panel->system>hardware profiles> click the desired profile and then "copy">browse to the folder like c: save profile or something?//OR//  Go into windows explorer->documents and settings->desired username to copy and then copy to an external source?

Also, does it matter whether the profile is a downloaded domain profile?  I mean if you copy it to and external source, then rename the domain and then reinstall the computer and add it to the new domain.  How do you copy the old profile and overwrite the "new" domain profile?  Thanks.
