I was hoping to add to my login script something that would automatically Change My Documents (from local C:) to the user drive which is U:\
Any help would be nice.

if you are in an active directory intergrated environment then the it will be fairly simple using group policy. in this case you create a new group policy and browse to the user configuration >windows settings>folder redirection> my documents setting: Advanced (specify locations for various users and groups).
Put all the users in a group and specify the path for it. that should be it. apply the policy to the organisational unit containing the users and that should be it

In fact, a better approach is to set this in AD's Group Policy.
Look under "User configuration"
