The shares can be moved over with the help of this article (assuming you have the exact same drive name and folder structure):
Saving and restoring existing Windows shares

You can use Robocopy for doing this. You can search for Robocopy on the Microsoft website.
The format would be
Robocopy \\server1\e$\subdir \\server2\e$\subdir /copyall

You can also use the File server migration tool

I would prefer to copy the whole folder to other server, remove sharing form the old server and set the same sharing parameters (name/ share permissions) for the new share

Another great tool we used to migrate our data from one server to the other.

http://www.scriptlogic.com/products/securecopy/

You can download the demo which copies about 2000 files at a time.
File Shares, File permissions, etc.. are retained during the copy

There are a number of steps that need to be taken when doing this, and they are:

• Closing connections for Users Shared Folders
• Ensuring the destination partition is formatted as NTFS
• Enabling quotas on the destination server partition (if they were in use before)
• Exporting and importing quota settings (if applicable)
• Moving the Users Shared Folders to the destination server partition
• Sharing the Users folder on the destination partition
• Enabling file version retention on the destination partition (if you have Volume Snapshot Service running on the share already)

There is a paper that was written for doing this on a Small Business Server, but the steps are identical.  See http://sbsurl.com/movedata

Also, if you are moving to a completely different server, the share will change from \\server1\users to \\server2\users.  This can be mitigaged by using DFS (distributed file system) but even then you would still have to change the name of the root of the share at least this one time.  It may be more effort than it's worth to do that part.

User Secure Copy by Script Logic
Worth every penny and can buy a license for the time you think it will take you to migrate all your data or for a much longer period.
Great pricing plan in my opinion since most people only migrate their file servers every once in a while.

you can also use this for backup capabilities

Roboycopy will work as well but Securecopy make life much easier.
