I have a Windows 2003 Terminal services server all up to date with patches etc and all has been fine until recently I started receiving the error, spooler sub system app has encountered a problem and needs to close. This means I dont have any of my printers available.

Using the commands NET STOP SPOOLER and then NET START SPOOLER, should fix this issue temporarily.
This issue can occur when you have printer redirection enabled on the RDP clients and every man and his dog is redirecting 20 or so printers each.
Try disabling printer redirection and installing the printers required for those users onto the Term Server.
