currently we have a solution via Exceed Hummingbird and our old version does not support XDMCP query. I understand that xming will work for this. We are using it to access our HPUX servers.
My question is "how do I get started". I have both putty and xming downloaded. Which do I run first and how?

You don't really need putty.
After installing Xming, use Xlaunch to create a configuration file. This configuration file in turn can be used to launch xming and connect to your HP box.
The Xlaunch wizzard will give you the option to use XDMCP:

xlaunch of xming fame.
use any desktop style you like. fullscreen is what unix window manager manages, others lets xming do better desktop integration.
putty is not involved with xdmcp, it provides telnet/rlogin/ssh for systems that do not provide xdmcp routinely like secured servers that do not provide user desktops etc.
