Problems with profile directory

Having a huge problem with moving the loaction of roaming profiles from one server to another.  currently users are setup to with a profile directory on svr1 i.e. \\svr1\profiles\user1  We need to move the profiles to a new 2003 server.  I created a new profile share on svr2, with full sharing permissions to everyone, NTFS full control to everyone, system, and administrators.  I changed the profile path for each user in AD.  My hopes were that it would move the data on its own when the user logged in and off.  I found that it was still updating the old roamign profile on the old server.  I unshared the old server profile directory.  afterwhich I just get an error can't find roaming profile.  I created a new user and set profile dir to \\svr2\profiles\user2.  I logged on and off.  This worked.  So here is my questions.  How do I point users to the new profile location?  Can I simply modify permissions on old profile data and manually move it over?  Please help?
