Quantum observations, mind-body

What constitutes an observation?

Suppose you were to measure the position of an electron, by firing some photons at it (or how ever), the electron's wave function would collapse, and it would have a definite position.
Now suppose that you repeated this experiment, only this time, you don't look at the photons after they interact with the electron. Would the wave function of the electron still collapse?

To reiterate: What constitutes an observation?
