DVD-R/W was the first DVD recording format released that was compatible with standalone DVD Players.
DVD-R is a non-rewriteable format and it is compatible with about 91% of all DVD Players and most DVD-ROMs.
DVD-RW is a rewriteable format and it is compatible with about 74% of all DVD Players and most DVD-ROMs.
DVD-R/W supports single side 4.7 GB* DVDs(called DVD-5) and double side 9.4 GB* DVDs(called DVD-10).


DVD+R/W has some better features than DVD-R/W such as lossless linking and both CAV and CLV writing.
DVD+R is a non-rewritable format and it is compatible with about 86% of all DVD Players and most DVD-ROMs.
DVD+RW is a rewritable format and is compatible with about 74% of all DVD Players and most DVD-ROMs.
DVD+R/W supports single side 4.7 GB* DVDs(called DVD-5) and double side 9.4 GB* DVDs(called DVD-10).

DVD-RAM is useless, it doesn't work on (stand-alone) DVD players at all. DVD+R discs barely exist yet, DVD+RW discs are costly, DVD-R discs are extremely cheap and DVD-RW discs are moderate price. "Plus" drives can only burn DVD+R/RW discs and "minus" drives burn only DVD-R/RW discs. Both drives can read both standards. DVD+R and DVD-R can be burned only once, DVD+RW and DVD-RW can be used like CD-RWs -- formatted and burned again. DVD-R and DVD+RW discs have best compatibility with players

DVD ram isn't useless check the Panasonic DMR-E50!
Although it can't be used on most (not all) standalone players, it has excellent features such as "timeslip" where you can start watching the beginning of a recording before it's finished recording, and also limited editing features (similar to minidisc i believe - cut n paste splitting tracks etc)
If you're thinking of a computer dvd writer there are ones available which will do everything.  If you're interested in a seperate dvd recorder it depends whether you want it for recording your own stuff and watching it again on the same player or making recordings which everyone can use.  For the former, dvd-ram is the way to go (dvd-ram drives can still write dvd+r discs); if not then the best idea would be to wait until a clear winner has emerged.

ok well that explains why my new NEC dvd burner spits out the dvd-r i put in... It only takes dvd+r. Thanks sunray. i'll pick some +r's up and hopefully it will let me burn

Many thanks for the help with this muddle of DVD media standards. Is it possible to create a DVD RW disc ( + or - ) that can accept Drag and Drop ie have files freely added to it or removed from it ( as opposed to re-formating and re-burning ) ?  It seems to be reasonably easy to achieve this with Cds but, so far, I have found it impossible with DVDs of any kind

Ofcourse you can. Use DLA software that comes with your burner (HP DLA, Sonic DLA) etc...
Then an empty will be formatted to use drag/drop...
