Anyway, for building anything "complex" in 3D, regardless of the program you are using (I recommend both MAX and Maya), you have to follow these instructions:
* Get a blueprint. It's a "drawing" of an object. You have to get the Top, Left, Front and Back views at least. The more, the merrier :D.
* Set that blueprint in your modelling space as a background or as a textured frozen object (I recommend using the second one).
* Start modelling with a small box or with individual polygons. Use the one that suits you better. You can also use Splines and then convert them to polygons prior to adding detail.
* Keep the model simple and THEN add the small things.
* When the model is finished, add textures. Remember that if you are making something symmetrical you can Mirror the model, which will surely end up in less work to do.
BTW, MAX has some excellent modelling tutorials. Check the Help for an Aircraft model tutorial. It includes almost everything you'll need.
