I've already scoured Google, made a list of good ones, and would like input from you great people about what you think is a good picture of a betrayer.

yeah yeah, stay on topic.
much as individual people are good ideas, you're not going to get the same recognition unless there's a caption there telling the viewer sho the person is, which sort of defeats the point. How many people are going to recognize Brutus or Judas on sight? Or Benedict Arnold for that matter? You might as well put of a picture of that guy from The Matrix that sold them all out, or hell, even Darth Vader. You'd get better contemporary recognition I like the original idea you have of a something like an arm stabbing someone in the back, something that expresses the idea more than provides a specific example.

Well Dante put the betrayers in the 7th (or 9th) circle of Hell.
Judas and Brutus were the big names.
Then there are Aaron Burr and Vidkund Quisling.
