Maybe it depends on the country/company, but where i work, they dont care as much about degrees, but in projects you did.
If you dont find a commercial project to work for in the beginning, you can still pick some open-source-projects, ask them to rework their GUI with them, show your skills there and use it as reference for your commercial applications.
You can show the before/after comparisons on the website, as robert said above.
At the end its about experience, the only way to get experience is by doing it ;)

One of the most important things you can do for yourself is to get a class, program or certification in Business Analysis. In many organizations, their is not a discrete need for design for UI only, but for what happens behind the UI as well as what the user sees. With your background that you have already and some business analysis to get you into that level of role, you should be set for a larger audience of business analysis with a specialty in UI design.
