dropdown list is blank when defining text

When I say ddList.Text ="some text"
the ddList.Text =""
I populate the list and the Text matches an item in the list, and yet Nada

Try to use
ddList.Items.Add("SomeThing")

Then you can use ddList.SelectedItem to access to it.

to add value

DropDownList1.Items.Add(new ListItem("some text", "sometextvalue"));

to change value

        int itemToChange = 0;
        DropDownList1.Items[itemToChange].Text = "some text";
        DropDownList1.Items[itemToChange].Value = "sometextvalue";

you cannot set the text in dropdownlist. you can only add items in it.
like this  
ddList.Items.Add("SomeThing")

after that you can access this in various ways.
