I need to get information regarding business closing days (vacations, holidays, etc...) which have been set in MS CRM via fetchXML / query expression.

It looks like the "CalendarRuleBase" table contains the Business Closures. It looks like they are designated by "subcode"=5, though you should verify this in your deployment or in the table def in the SDK.
So, if that's true, here's a fetchXML statement that will get you all business closures (all attributes):
<fetch mapping="logical">
<entity name="calendarrule">
<all-attributes />
<filter>
<condition attribute="subcode" operator="eq" value="5" />
</filter>
</entity>
</fetch>
In SQL land it's:
SELECT *
FROM CalendarRuleBase
WHERE (SubCode = 5)
