Do you mean you want to cancel a build that's already in progress, or you want to exclude one project in a solution from the "Build Solution" menu?

If #1, while the project is building, a "Cancel" menu item appears in the Build Menu.

If #2, go to Build -> Configuration Manager:
The far right column called "Build", uncheck the projects you want to manually build each time.
