...was changed to...
var _daDesk = new OdbcDataAdapter();
Which is better / more performant?

Not really sure about speed or memory usage stats, but to me being able to read that the type is OdbcDataAdapter makes it more readable. Although, since you are saying that it will be a new OdbcDataAdapter, I know that it will be that type and not change.
From what I have read this was introduced to deal with annonymous types. You can google and find a lot of developers views on the use of var, both pro and con.
