Ajax form validation onClick problem

Hi,
this is my first question on this forum, so bare with me please...

I have a standard form in a php file with submit button...

The problem: I´ve got a form with standard input like name, address, zip and email, etc. When a user fills in a field and then clicks somewhere in the page a ajax request is fired with the result that an entry in a mysql-table with post-data-input of the user is made.  When they click the submit button and every field is filled out correctly he will be redirected to another page if there was an empty field an error message will be triggered instead...

Now when the user fills in the last entry he won´t click somewhere in the page but directly on the submit button and many users (we have 2500 per day) say that they got an error message which says that the field was empty although they had filled it. Even when I attach the onClick event to the submit button or onSubmit or onMouseOver, the last field sometimes will not be processed...

so here´s the schema:

input type text name='name' --> user types in the name
input type text name='address' --> user clicks --> ajax is fired for the first field--> user types in the second field
input type text name='email' --> user clicks --> ajax is fired for the second field --> user types in email
submit-button --> ajax is not fired for the email field because the user did not click somewhere on the page before?
