Hi IDPInc,
With Outlook off Navigate the PST and copy it to the network drive (this is a good back up as well)
Go into Outlook as the user.
Find the Data file definition (in outlook 2007 - Tools, Account Settings, Data Files)
Remove the Large PST data file from outlook (This will not delete the file)
Then Add a new Data File definition (PST) and point it at the file on the network.
Done.
The only problem is if the user is not connected to the network then he/she will not be able to read the mail in the PST.

After you move the archive.pst, in Outlook go to File > Open > Outlook Data File. Navigate to network location and select.
Be careful with using PST file over a network. If the network goes down while accessing the PST file, it could corrupt the PST file.
