Microsoft Excel has caught a lot of criticism over the years for inaccuracies in the way it handles statistical calculations. The statistical functions were revamped for Excel 2003, but some issues still remain--so take a grain of salt with any conclusions you draw using those functions.
You might find this bibliography offered by XLSTAT to be helpful when selecting a book on Excel and statistics: http://www.xlstat.com/en/support/books/ I clicked on the link under Excel and Science, and several of the titles looked appropriate to your question.
