Help setting up kid-proof educational kiosk computers

Hi experts.
My work requires me to setup two kiosk computers for kids to use in a staff-monitored waiting room environment.

The computers must run a proprietary full-screen application that accesses internet (in the background) for logins etc.  There is no need to have access to anything else on the computer.  Ideally, the computer would boot directly into the application.  The computer would be connected to internet via ethernet or wifi.  The computers would have a normal keyboard and mouse connected.

I have two machines to work with: a Dell Studio One 19 touchscreen All-in-one w/keyboard and a HP Compaq 6000 Pro All-in-one both with Windows 7 pro licenses (and XP pro if necessary).

In the case of the Dell touchscreen computer, it would be nice to allow access to the touchscreen facility.

I wouldn't be adverse to purchasing kiosk software or downgrading the OS to something like XP Pro if it were to make a secure kiosk environment easier to achieve.

In case this sounds like deja vu, I did ask a similar question a while back but the circumstances are different now, in that the computers aren't required to be under domain management.  They are standalone now which will hopefully make things easier.

I should also add, that it would probably be a good idea to limit internet access to one site as well, just in case they manage to get to a desktop and into IE.

Thanks for the advice guys.

I have had success with johnb6767's solution.  No dramas if followed correctly.  I did however locate an app that seems to do everything in one package, and it was from the supplier Faronics that Run5K suggested, called WinSelect.  It is not too expensive and is simple enough for me to specify to others for additional installations.  It allows configurations to be duplicated from computer to computer and locks everything down nicely, with a handy dashboard of allowed apps (if you want.)
