Detailed Tutorials: The Encase Study Guide to their Encase Certification is a good place to start. It has a very good breakdown of computer forensics, and how to use the tool to do computer forensics. It also comes with a DVD that has a version of encase that will work only with the disc images provided on the DVD.

Good Sites: Does your company/institution own a copy of Encase? If so, you could likely have them create you an account on Guidance Software's internal support site. This has many resources and forums devoted to Encase and the other GS products. This should also grant you access to be able to download the user manuals, which are pretty good.
Online Practice Labs: None that I know of. However you could also call Guidance, explain your situation and ask for a Demo CD of their software which also is limited to the images on the CD. They likely also have literature and demos that showcase the capabilities of Encase that they can send and/or show you.
