Best method encrypt querys while connecting to Server with MySQL

I am connecting to a server on another machine over the Internet via TCP/IP from my own client machine using an application that was created by a third party. From my understanding, its doing so using the MySQL Administrator running the MySQL Client version 5.1.11 against a server running 4.1.22. The querys are made using PHP, but a general sniffer is showing the SQL script and hense allowing people to see what the query is.

I have to send/receive data in certain connections to the server in an encrypted format, and my understanding of the topic is that I must use SSL to do so. Is this true or is there some other method that will keep a common sniffer from seeing the query or the results from the query? Or do I need a SSL certificate? Can mcrypt(functions) be used for this requirement?
