I doubt you'll find any cookbook for Solaris 10, because this is not the way things are done any more.
Here's some pointers for doing this in Solaris 8, you'll need to adapt these yourself for use with S10:

Here's how to create a zone:

Create a sparse zone, this type of zone has most filesystems mounted read only and is quite secure by default.
In the global zone, create a link to make sure /usr/local is writable in the zone you created, e.g.
globalzone> ln -s /export/home/local /usr/local/
localzone > mkdir /export/home/local
Now download and install openssh as usual. Configure it as needed.
To make the zone even more secure, you can disable unwanted services using svcadm.

Although you could create a traditional "jail" in Solaris 10, there's a much much better way to go about.
Simply create a solaris zone and install SFTP inside the zone. You get all the security you would get using a traditional jail but it is much easier to set up and maintain a zone.
