Ok, like rhrowson said, SUS is a Microsoft product, so it only runs on Windows. Not on Linux.
The only idea I have is if you ran a virtual software program on Linux that would let you emulate a Windows box. VMWare is, IMHO, the best at "virtual computing" as they call it.
And there is a Linux version of VMWare! The VMWare GSX Server 3 version does run on Linux. Go here for specs:

It runs on various versions of RedHat, SuSE, Mandrake, and Turbolinux.
What you could do is instll VMWare GSX Server 3 on your Linux box, and set up a virtual environment where you would then install a copy of Windows 2000 Server or 2003 Server. And then install SUS in that virtual Windows.
Anyway, just an idea.
