second, are you thinking about winbdows 2003? because I'm using 2000
my experience is that I create a profile$ share. the default ntfs permission with 2k is: everyone = full control. I log is an a new user with the profile set to the profile$ share. The profile folder is created in the share, i cannot see permissions even as administrator. I take ownership of the folder and look at the permissions. administrator has explicit full control and the everyone group has inherited full control.
It is at this point that i want to change settings so that people are limited to accessing their own profile, yet the automatic creation of new users profiles still works.

By default, only the owner (specific user) and administrator will have access to the profiles created along with the user account.
If things are breaking, what's happening? Are you changing permissions on the user$ shares ? If so, don't! Profiles will be automatically created and permissions setup for that user without the need for doing this...
