How can i restrict access to folders for an admin user?

I am the IT Manager at my workplace but we also have an outsourced I.T. contract in place also for support on our network, servers and operating systems. We run SBS2003 (SP1).

Our support company have admin rights so they can access all areas but our MD wants to stop them having access to certain folders on our network that contain confidential information.

What is the best way to restrict access to certain folders that contain confidential information bearing in mind that the support company need admin rights to support our network fully.

We have a master folder with lots of sub folders which are restricted to authorized users only by applied security access permissions.

I need to stop the external support company from accessing this area. Is encryption the best answer considering that an admin user can change security permissions etc to give themselves access?

How can I give someone administrative rights and also restrict access to confidential information on our network?

What do other companies do in this situation?
