to watch the network activity bound to the applications
Hi,
Use a port scanner like NMAP to check which ports are open in your network and then you can separate the ports which are required and then other ports like GamePorts, P2P etc.

1) You could block the games on the users computer in windows firewall, and then maybe set the user policy so that the user could not access the firewall settings. This could be a daunting task depending on how many users you have on the network. It would be much easier if you had a proxy server which all your internet traffic ran through. Then you could set the firewall settings for the entire group, and not have to worry about anyone changing settings back.
2) You can also block (filter) ip's and ports in most router setups. Here is a list of just about every game that accesses the internet. http://portforward.com/cpo
3) You can also set up your router to use openDNS. It's free and once you get an account you go into the setup and can block all kinds of sites like porn, p2p, games, etc. that you don't want users accessing. This would not definately block the games your users are accessing, only those included in the openDNS block list, but there are many other advantages to using it. http://www.opendns.com

you would need to know what ports do the games use for connecting through the lan, that would be the first step to block them using policies or firewall
