If your uploading files using the HTTP/HTTPS procotol, (web browser), through a proxy, (which is set up correctly), then yes it will hide your IP address and use the IP of the proxy you are using.
If your are FTPing a file up, generally, the proxy will be bypassed and yours will used, again depending on how the proxy is set up.
