Stock control from a form

I have a table wirth current stock levels. i.e. the level of stock beforme the implementation of a new system of adjusting stock daily.

I want to:

a) Replenish the stock, by adding, via a form, additional stock. I envisage something like "enter stock ID" then "amount of stock items to add" in a Query

b) Have stock decreased according to sales, whichare imported from excel daily as additional rows in a table of historical sales. The stock code and the number sold is imnported daily into Access from an excel sheet. So every time new data is imported, a calculation of stock depletion needs to occur.

I'd like soom advice on the best way to achieve this level of adjustment - changes to stock levels thru replenishment & sales )depletion)
