How to debug program crashes during run time.

Hi we run a mission critical cctv monitoring application that crashes from time to time when motion alarms are received by it from cctv cameras. The manufacturers of the cameras who also provide the monitoring software say they are unable to replicate the problem and have advised we put in higher spec systems. We did this but the problem remains. I would like some guidance on how we could run a runtime debugger to capture relevant data before, during and after the crash so that it could later be sent to the manufacturers or possibly even posted on experts exchange to try and identify the cause of these crashes.

The monitoring centre is being run on both Vista and XP systems.
